Happy February! Can you believe how long it took January to end? I don’t know about you but I’m looking forward to Spring. No more shoveling, and super cold mornings because after an evening drive full of weather-related traffic the last thing I want to do is take hours to make dinner.
While I always season my meat in advance or use my slow cooker for my main dish, sometimes its the side dish that can take the longest.
This post is about a side dish that will take 5 minutes to prep and about 15 minutes to cook. Whats better? It tastes AMAZING!
This Easy Coconut Rice recipe is a staple in our weekly meal plan. I always make sure I have some sort of quick cooking rice for those days when we don’t have any leftover rice on hand.
Easy Coconut Rice
Yield 4 Servings
This coconut rice is extremely easy to make and goes wonderfully with Indian and Thai dishes and can be made in just 20 minutes!
- 2 Cups Rice (Jasmine or Basmati)
- 1 Cup Coconut Milk
- 1 Tablespoon oil
- 3 Tablespoons sweetened shredded coconut (you can use more or less depending on your preference)
- 2 Cups Water
- Fried Onions (Optional)
- Wash Rice
- Put Rice in the rice cooker. Add water, coconut milk, shredded coconut, and oil
- Stir well, cover and set to cook
- Once your rice cooker is set to warm, sprinkle with fried onions
- Serve with any Thai or Indian dish of your choice
